Cold or Hot Smoking?

There are lots of smokers on the market both manufactured in
this country and of course overseas.
But the fun is to make a  Smoker from various things like old deep freezes
ovens, upright fridges and anything that can be stood upright that has
an opening door.
I found an upright fridge freezer on the "Tip" it looked
ideal for the job, I stood it upright in bricks to create an air passage and
drlled several  holes in the base and in the top---so far good Pu sticks
wood shavings and sawdust on the base. A selection of fish--which I
had caught and after a few goes got the "fire" producing smoke.Left
everything for the afternoon untill the smoke stopped.
The food was ready to finish cooking so fried the fish taste was
--well--OK but something was lacking. It was the  that I tought I had
 better find out more about Smoking.

I am a native of the United Kingdom now in Scotland.
My passion for smoked food started some years ago
when I was given a "pressie" of smoked shell on Prawns.
They were delicious and I thought I can smoke myself.
The first try was using an old oven in the garden. I used
 the base after drilling a few air holes and the shelves
to hold the prawns. Wood shavings and sawdust was
used for the smoke. I had drilled hloes in the top of the oven
Wow ! after about half an hour tried the prawns--
They were great!!
